Acid (Acide)?

A chemical hydrogen compound recognizable by its property of causing litmus solution to turn red. Naturally found in grapes, this essential component contributes to the crispness, sourness, sharpness, and tartness of a wine. Acid can balance the sweetness of a wine. Acid is necessary for a wine to age well. Grapes contain Malic, Citric, and Tartaric acids.
