Does anyone have a recipe that will produce something like Tyson Fajita Chicken Breast Strips? Tasty but $3.50 for 6 ounces.

I found the quickest tastiest fajitas are made with the cut chicken/steak, onion and peppers (you can get these pre-chopped in the frozen veggies) then add 1/4-1/3 cup of chipotle salsa (or your favorite kind), just enough to cover the meat/veggies. Make sure it isn't watery. It has all the seasoning & tomato in it, just heat up and serve.

Using the amount of chicken you deem approiate, slice in thin strips and saute in small amount of oil until amost done. Remove from from pan and place aside. Meanwhile, cook 2 sliced bell peppers (more visually interesting if you combine green, yellow and/or red, but not necessary), and two sliced onions in small amount of oil until "wimpy" add one can Rotel and return chicken to pan. At this point add a full package of Fajita seasoning mix and completely mix. Serve with cheese, sour cream and refried beans. Serving is approximately three small fajitas flour tortias burritos per person. Mitzi
