Sugar Plum Coffee Cake


  • 1/4 cup butter or margarine, melted
  • 1/2 cup packed brown sugar
  • 1 large apple, peeled, cored and thinly sliced into rings
  • Ad
  • 1 can purple plums, drained, halved and pitted
  • 1/2 cup chopped walnuts
  • 1 egg
  • 3/4 cup milk
  • 2 cups buttermilk baking mix
  • 2 Tbsp. granulated sugar


Preheat oven to 375 degrees F. Pour butter into 9 inch square baking pan; tilt pan to evenly coat bottom of pan. Sprinkle evenly with brown sugar. Arrange apple rings in single layer over brown sugar. Place plum half, rounded side down, in center of each apple ring. Place remaining plum halves around apple rings; sprinkle with walnuts. In medium bowl, whisk egg and milk. Add baking mix and granulated sugar; stir until smooth. Spread batter evenly over nuts. Bake 25-30 minutes or until lightly browned. Cool 5 minutes; invert onto serving plate. Serve warm.
