Cake

Ingredients

  • 1 cup oatmeal (uncooked)
  • 1/2 cup butter
  • 1 1/2 cups boiling water
  • 1 tsp. soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 cups flour
  • 1 cup plus 2 Tbsp. sugar
  • 1 cup brown sugar, packed
  • 2 eggs beaten

Directions

Mix oatmeal and butter together. Pour boiling water over them to soften. Add soda, cinnamon, salt, flour, sugars, and eggs. Mix well pour into greased 9x13 inch pan and bake at 375 degrees F for 25 minutes.

Topping For Cake

Ingredients

  • 3/4 cup brown sugar, packed
  • 2 Tbsp. milk
  • 6 Tbsp. butter
  • 1 cup shredded coconut

Directions

Combine sugar, milk and butter in saucepan and bring to a boil for 1 minute. Add coconut and stir. Spread onto cake. Place under broiler until lightly browned
