Ingredients
- 3 eggs
- 1 1/2 cups sugar
- 1 cup cooking oil
- 1 1/2 cups sieved, cooked beets
- 2 oz. chocolate, melted or 2 oz. cocoa
- 1 package instant chocolate pudding (3oz.)
- 1 3/4 cups flour, sifted
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. vanilla
Directions
Whip together eggs and sugar with an electric mixer until light. Add oil, beets, cocoa and pudding. Blend until everything is well mixed. Blend in vanilla. Add flour, soda and salt. Mix well. Pour into greased cookie sheet and bake at 375 degrees F for 30 minutes. You can use a 9x13 pan for a cake or thicker brownie, just bake longer. They are very moist and keep well. They are absolutely delicious!
