Tomato Pasta

Tomatoes are in season and the prices are good. Here is a family favorite with fresh tomatoes. I simply call it Tomato Pasta. This is a great and yummy meal to prepare and serve quickly.

Ingredients

  • 6 tomatoes, seeded and chopped
  • 3 Tbsp. extra virgin olive oil
  • 1/4 cup chopped fresh basil
  • Salt and fresh ground pepper to taste
  • 1 pound pasta, my family prefers the thin spaghetti

Directions

Prepare tomatoes and add olive oil, basil, and salt and pepper to taste; mix gently. Bring large pot of salted water to a boil and add pasta; cook until al dente according to package directions. Drain pasta and immediately toss with tomato mixture; serve at once with a side salad and homemade garlic toast or bread.
