Put cheese and tomatoes in bowl, adding curry powder and egg; mix together. Add to the pastry base and pop into a warm oven gas mark 6 (400 degress F). Bake 15-20 minutes, or until golden brown on top. Take from oven and let cool for 5-10 minutes.

Place tomatoes in boiling water. Make sure they are covered. Let set 3-4 minutes off stove. Run cool water into pan until tomatoes are cool enough to handle. Peel, core, and slice tomatoes thick.

Living in the south, we are so blessed to have so many fresh fruits and vegetables. Having so many means coming up with creative ways to prepare them. This recipe is a favorite for those who love fresh tomatoes.
Place uncooked biscuits one at a time in the bottom of a deep-dish pie pan and press together until they cover the bottom of the pan.
Note: You can peel your tomatoes before hand if you wish. Just depends on your diet.

Since this is "Tomato" week at Thrifty Fun, I thought I'd submit an unusual and delicious dish using tomatoes as the main ingredient.

Sandy - I fixed your Tomato Pie for dinner last night. My husband and I loved it. Just fantastic. Had to keep an eye on my husband though - he thinks that "pie" should be served with a scoop of icecream on top! Will be making that one again, and sharing it with friends! Thanks (08/08/2008)
Preheat oven to 350 degrees F. Place the tomatoes in 1 layer in a colander in the sink. Sprinkle with salt and allow to stand for 10 minutes.
Layer the tomato slices, basil and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned. Cut into slices and serve warm.
Source: This recipe was clipped from our local little weekly paper. I tried this last evening and found the tomato pie very tasty. Will be making it again.
