This recipe is so easy to make and can be a delicious meal or snack for the family at a low cost.


  • 8 oz. Leicester cheese, grated
  • half tin of chopped tomatoes
  • 1 medium sized egg, beaten
  • 1 tsp. hot/medium curry powder
  • pastry base (ready made shell) or make your own


Put cheese and tomatoes in bowl, adding curry powder and egg; mix together. Add to the pastry base and pop into a warm oven gas mark 6 (400 degress F). Bake 15-20 minutes, or until golden brown on top. Take from oven and let cool for 5-10 minutes.

Servings: 6-8
Prep Time: 10 Minutes
Cooking Time: 15-20 Minutes

Place tomatoes in boiling water. Make sure they are covered. Let set 3-4 minutes off stove. Run cool water into pan until tomatoes are cool enough to handle. Peel, core, and slice tomatoes thick. Pat dry with paper towel and set aside. In separate dish, mix cheese, mayonnaise and 1/2 of chives. Put tomatoes in pie crust. Pour rest of chives and pepper over tomatoes. Cover with cheese mixture, sealing edges and bake at 350 degrees F for 30 minutes or until crust is light brown.

Living in the south, we are so blessed to have so many fresh fruits and vegetables. Having so many means coming up with creative ways to prepare them.

Since this is "Tomato" week at Thrifty Fun, I thought I'd submit an unusual and delicious dish using tomatoes as the main ingredient.



  • 2 pie crusts (I like the Pillsbury refrigerated ones)
  • 4-6 ripe tomatoes, peeled and thickly sliced
  • 1 tsp. salt
  • 1 tsp. freshly ground pepper
  • 2 Tbs. chopped fresh basil (1 Tbsp. if dried)
  • 1 cup sharp cheddar cheese--grated
  • 1 cup mayonnaise


  1. Line a nine-inch pie plate with pastry.
  2. Cover with layers of sliced tomatoes.
  3. Sprinkle with salt, pepper, and basil.
  4. Blend cheese and mayonnaise and spread over tomatoes.
  5. Cover with top pie crust.
  6. Bake at 400 degrees F for 15 minutes. Then reduce heat to 350 degrees F for 20 minutes or until crust is slightly brown.

Eat and enjoy--a summer must!

Summer Tomato Pie

Sandy - I fixed your Tomato Pie for dinner last night. My husband and I loved it. Just fantastic. Had to keep an eye on my husband though - he thinks that "pie" should be served with a scoop of icecream on top! Will be making that one again, and sharing it with friends! Thanks (08/08/2008)

  • 4 tomatoes, peeled and sliced
  • 10 fresh basil leaves, chopped
  • 1/2 cup chopped green onions
  • 1 (9-inch) prebaked deep dish pie shell
  • 1 cup grated mozzarella cheese
  • 1 cup grated cheddar cheese
  • 1 cup mayonnaise
  • Salt and Pepper


Preheat oven to 350 degrees F. Place the tomatoes in 1 layer in a colander in the sink. Sprinkle with salt and allow to stand for 10 minutes.

Layer the tomato slices, basil and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned. Cut into slices and serve warm.

Source: This recipe was clipped from our local little weekly paper. I tried this last evening and found the tomato pie very tasty. Will be making it again.
