- 8 hard cooked eggs, peeled and halved
- 1/4 cup butter or margarine
- 1/4 cup flour
- 1 1/2 cups milk
- 1/2 cup heavy cream
- salt and pepper, to taste
- pinch ground nutmeg
- 3/4 cup shredded Swiss cheese
- 1/3 cup shredded Parmesan cheese
Preheat oven to 450 degrees F. In greased 9 inch square baking dish, arrange eggs, cut-side down. In medium saucepan, melt butter over low heat. Blend in flour; cook and stir 1 minute. Gradually whisk in milk. Cook and stir until mixture comes to a boil and thickens. stir in cream, salt, pepper and nutmeg. Add Swiss cheese; stir until melted. Pour cheese sauce over eggs. Sprinkle with Parmesan cheese. Bake 20-25 minutes or until golden brown.
