Pear Pecan Salad

Ingredients

  • 1 can pears (1 lb.)
  • 1 package lemon Jello (3 oz.)
  • 1 package cream cheese (8 oz.)
  • 1 cup chopped pecans
  • 1 cup whipping cream

Directions

Drain pears reserving 1 cup of juice. Bring juice to boil and remove; add Jello and chill until partially set. Blend pears and cheese in blender until creamy. Stir in Jelly and pecans. whip cream and fold in with other ingredients. Pour into large mold or 16 individual molds.

Excellent recipe. I lightened it up by using Neufchatel instead of cream cheese (1/3 less fat) and sugar-free Jello. I also substituted Rediwhip for the whipped cream, saving that extra prep step, and it came out just fine. I'm trying to cut back on sweets and this will make a great bedtime snack!
