Cheese Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 1/2 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/2 tsp salt
  • 3 cups shredded Colby-Jack cheese
  • 1 cup milk
  • 1 egg
  • 1/4 cup melted butter

Directions

In a medium sized mixing bowl whisk together all of the dry ingredients. Next stir in all three cups of cheese. (if you like a sharper cheese flavor you can substitute cheddar)

In a separate bowl, whisk egg, milk, and butter together. When mixed thoroughly, pour the milk mixture into the dry ingredients and stir with a spoon to combine.

Bake in greased muffin tins in a 375 degree F oven for 20-25 minutes.

Makes 12 delicious muffins.

correct me if im wrong, but are american muffins the equivalent to british SCONES? i have a recipe for cheese SCONES which is so similar to this but the name is different.
