Microwave Cashew Cinnamon Brittle
This is a great recipe for gifts! Nice alternative to the regular peanut brittle!
- 1 cup cashew nuts, halves
- 1 cup sugar
- 1/2 cup corn syrup
- 1/8 tsp. salt
- 1 tsp. butter
- 1 tsp. baking soda
- 1 tsp. cinnamon
In a microwave safe bowl stir sugar, syrup, salt, and cashews. Microwave on high 4 minutes. Stir well. Microwave 4 minutes more. Stir in butter and cinnamon, microwave for 2 minutes longer. Add baking soda and stir until light and foamy. Immediately pour into a greased pan, spreading out thin. Cool then break into pieces!
