Pizza Muffin Cups

I serve these as a quick meal with tater tots when I am short on cooking time.
  • 1/2 lb. ground beef
  • 2 1/2 cups spaghetti sauce
  • 1 (10 count) tube Pillsbury rolls
  • 1 cup shredded mozzarella cheese, divided

Directions:

Brown ground beef and drain, if needed. Add spaghetti sauce to beef and heat through. Meanwhile, separate rolls and flatten with your hands. Place rolls into sprayed muffin cups and press dough up the sides as much as possible. Spoon beef/sauce mixture evenly on top of the dough. Sprinkle each "cup" with mozzarella cheese. Bake in a preheated oven at 350 degrees F for 15-18 minutes.

Recipe: Pizza Cups

Great for kids or serve with soup and call it dinner!

Ingredients

  • 1 tube of buttermilk biscuits (10 count)
  • 9 oz. Ground turkey
  • 1/2 cup (small can) of tomato sauce (any kind, I use spicy)
  • 1 tsp. dried basil
  • 1 tsp. Italian seasoning
  • 1/2 - 3/4 tsp. fennel seed
  • 1/2 tsp. garlic powder
  • pepper a few shakes
  • 4 oz. shredded cheese (you can use mozzarella or Monterey jack)

Directions

Preheat oven to 400 degrees F. Spray muffin tin with nonstick spray.

Lightly flatten each biscuit, press into the bottom and up the sides of the muffin tin (best if brought to room temp before putting in tins).

In a skillet, saute turkey until browned, breaking it up into small pieces. Drain, then stir in all remaining ingredients except the cheese. Spoon mixture into biscuit cups, sprinkle with cheese.

Bake for 12-15 minutes until cheese is bubbly and biscuits are golden brown.
