Buffet Meatballs

Ingredients:

Meat Balls:
  • 3 lb. ground beef
  • 1 1/2 cups fine bread crumbs
  • 1 cup smooth applesauce
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. nutmeg
  • 1/2 can tomato soup
  • 2 eggs
Sauce:
  • 3 cans tomato soup, undiluted
  • 3 cup each of diced carrots, onions, celery
  • 3 Tbsp. Worcestershire sauce
  • add water, if necessary to cover meat balls

Directions:

Mix meat ball ingredients and form into medium sized balls. Brown and place in covered baking dish, pour sauce over. Bake 2 1/2 hours in slow oven (250 degrees F) until meat balls are puffed from absorbing sauce.

What temp is used to bake the meatballs?

Editor's Note: It should be at 250 degrees F, I have added it to the original recipe.

Recipe: Buffet Meatballs

With the Super Bowl game coming soon, these meatballs make an excellent part of the party foods to serve. I've been serving these meatballs since the first Super Bowl game, and made my own meatballs until the convenience of frozen ones came into being.

Ingredients

  • 1 cup apple juice
  • 1 cup grape jelly
  • 1 cup ketchup
  • 1 (8-ounce) can tomato sauce
  • 4 pounds frozen Italian-style meatballs

Directions

In a saucepan, combine juice, jelly, ketchup and tomato sauce. Cook and stir over medium heat until jelly is melted. Remove from heat.

Place meatballs in 5-quart slow cooker. Pour sauce over top and gently stir to coat. Cover and cook on LOW 4 hours, until heated through

Makes approximately: 11 dozen meatballs

Note: I add a few drops of hot sauce to one batch of these meatballs, giving the guests a choice of two flavors.
