- 4 lg. chicken breasts, boned
- 1 egg, beaten
- 1/3-1/2 lb. Ritz crackers, crushed
Cut chicken breasts in to serving size pieces. Dip chicken in egg. Roll in cracker crumbs to cover. Brown on both sides in 1/4 pound margarine in skillet. Reduce heat to low and cook for 20 minutes longer, adding additional margarine if needed to prevent sticking.
