Healthy Cabbage Salad
This recipe is good for you and tastes great, too! This recipe is good for you and tastes great, too! Serve with a sandwich for lunch or as a dinner "go-along."
- 1 small head purple cabbage, shredded (about 8 cups)
- 3 or 4 apples, peeled, cored and finely chopped
- 1/2 cup golden raisins
- 1/2 cup apple juice
- 1/2 cup mayonnaise
- 1 Tbsp. dried dillweed or 2 Tbsp. chopped fresh dill
In a large bowl, combine all ingredients. Let stand in refrigerator for at least 2 hours to "marry" the flavors. (Overnight is best!) Store in refrigerator until ready to serve.
Note: This will keep in the refrigerator for up to 3 days.
