Ranger Cookies

My favorite cookie when I was growing up.

Ingredients:

  • 1 cup soft shortening
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 2 cups oatmeal (quick cooking or old fashioned, not instant)
  • 2 cups plain cornflakes
  • 2 cups flaked coconut
  • 1 cup chopped nuts, your favorite

Directions:

Mix well in order given. Drop by teaspoonful onto greased cookie sheets about 1 1/2 inches apart. They will spread about like a chocolate chip cookie. Bake at 375 degrees F for 10 - 12 minutes. Cool on a rack.

Thanks for sharing this recipe! I was just looking for a recipe with similar ingredients, will probably make these today. YUM!

I am looking for a recipe for Ranger Cookies. Someone posted one and I failed to copy it to my recipe files.

Here's one:
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup shortening
  • 2 beaten eggs
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups flour
  • 2 cups rolled oats
  • 2 cups rice krispies
  • 1 cup coconut
  • 1 cup chopped nuts
Gradually cream sugars into shortening. Stir in eggs and vanilla. Sift baking powder, salt and baking soda with the flour and add to creamed mixture. Add rolled oats, rice krispies, nuts and coconut. Mix well and drop by teaspoon onto baking sheet. Press flat. Bake at 350 degrees F for 8-10 minutes. I have also made adjustments to this that worked well. My husband doesn't like coconut and nuts, and once I was out of oatmeal and the rice krispies, so for the last four items I substituted 6 cups of flake cereal mix (some corn flakes, and bran flakes) and that turned out well. Another time I had no oatmeal but everything else, and I increased the flour by 1/2 cup instead. (10/30/2009)
