Vegetarian "Meat" Balls

Ingredients
  • 2 Eggs, beaten
  • 3 Egg whites, beaten
  • 1 small onion, minced
  • 3 Tbsp. fresh parsley, minced
  • 1 1/2 tsp. poultry seasoning
  • 2 garlic cloves, minced
  • 1/2 tsp. salt
  • 1 1/4 cup reduced sodium saltine crackers, finely crushed
  • 3/4 cup ground walnuts
  • 3/4 cup reduced fat cheddar cheese, shredded

Apricot BBQ Sauce:

  • 3/4 cup 100% apricot spreadable fruit
  • 1/2 cup ketchup
  • 1/4 cup lemon juice
  • 2 Tbsp. brown sugar
  • 2 Tbsp. onion, minced
  • 1 Tbsp. canola oil
  • 1/2 tsp. salt
  • 1/2 tsp. dried oregano

Directions

In a bowl, combine 1st 7 meatball ingredients. Add crackers, walnuts, and cheese, mixing well. Coat hands with nonstick cooking spray, shape mixture into 1 inch balls. Place in a 9x13 inch baking dish coated with nonstick cooking spray. In a small saucepan, combine all sauce items and bring to a boil. Pour over meatballs. Bake, uncovered, 25 minutes or till meat thermometer reads 160 degrees, in a 350 degree F oven. Serves: 8

I would make these changes to make it a healthier recipe. I would use 1 1/4 cup of Whole Wheat bread crumbs OR whole wheat crackers and maybe change the walnut ingredients to flax seed, ground or chopped almonds or ... or... or. Recipe sounds great and I will definitely be trying it. I usually use white meat ground turkey in my meataballsa (meatballs).
