Danish Coffee Cake

Ingredients

Pastry:
  • 1 cup sifted flour
  • 1/2 tsp. salt
  • 1/2 cup butter
  • 2 Tbsp. water
Topping:
  • 1 cup water
  • 1/2 cup butter
  • 1 tsp. almond extract
  • 1 cup sifted flour
  • 3 eggs, slightly beaten
Glaze:
  • 1 cup powdered sugar
  • 3 tsp. lemon juice

Directions

Sift flour with salt and cut in butter with pastry blender or fork. Add water and mix until all is moistened but do not overwork or pastry will be tough. Divide into halves and pat in 2 strips 3x12 on ungreased jelly roll pan.

For Topping: Boil water, add butter and stir until melted. Add salt and almond extract and flour all at once. Add eggs and mix only enough to moisten as over beating will make mixture runny. Spread on each strip. Bake at 375 degrees F for 35 minutes. Top with glaze.

For Glaze: Mix and pour over the coffee cake while warm. Serve warm.
