| Zesty Olive Chicken |
This chicken dish is light, healthy and delicious - and cooks in one skillet. An easy family meal.
Ingredients
- 8 chicken tenderloins (I buy 3 or 5 lb frozen bag)
- 1/2 can chicken broth
- 1-2 cans diced tomatoes, any flavor
- 1/2 cup sliced green olives
- 1/2 cup chopped onions
- 1 bay leaf
- Olive oil
Directions
Slightly thaw chicken tenderloins, then cut into bite size pieces. Saute in 1-2 tablespoons olive oil in heavy skillet along with chopped onions until chicken is browned and onion is limp. Add chicken broth, tomatoes, green olive and bay leaf, cover and simmer for 45 minutes on low. Remove bay leaf and serve with white or brown rice.
