Crock Pot Meat Loaf

This is an easy, yet delicious meatloaf, and you can make it without turning on the oven. Put it in the crock pot in the morning, run errands all day and your main course is ready when you get home. The topping makes this meatloaf a real treat.

Ingredients:

  • 1 egg
  • 1/2 cup tomato sauce
  • 1 envelope McCormick meatloaf seasoning mix
  • 1 small onion, chopped fine
  • 1 small green pepper, chopped fine
  • 1 lb. lean ground beef
  • 28 small saltine squares, crushed
Topping:
  • 8 Tbsp. ketchup
  • 1 Tbsp. brown sugar
  • 1/2 tsp. dry mustard

Directions:

Spray a crock pot with cooking spray. In a bowl, combine the egg, tomato sauce and seasoning mix. Stir in the onion and green pepper.

Using your hands, add the ground beef, then the crackers. Shape into a ball, place in the crock pot, then flatten the ball into a patty, leaving about 1/4 inch of free space all around.

Stir together the topping ingredients and spread on top of the meatloaf.

Cover and cook on low for 7 hours.
