Chocolate Pudding Cake

Ingredients

  • 1 cup flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 3/4 cup sugar
  • 2 Tbsp. cocoa
  • 1/2 cup milk
  • 2 Tbsp. cooking oil
Topping:
  • 1 cup light brown sugar
  • 1/4 cup cocoa
  • 1 3/4 cups very hot water (not from tap)

Directions

Mix dry ingredients together. add milk and oil. Beat well. Spread in 8 inch square pan, well greased. Mix sugar and cocoa in topping and sprinkle over cake. Pour 1 3/4 cup very hot water over all through a slotted spoon, slowly. Bake at 350 degrees F for 45 minutes. Fudge pudding layer forms under cake.

Robin I love your recipes! Before I attempt this one, please clarify something for me.

"Mix sugar and cocoa in topping and sprinkle over cake. Pour 1 3/4 cup very hot water over all through a slotted spoon, slowly."

Do you mean mix the brown sugar and cocoa together AS the topping and sprinkle the mix over the cake batter? Then drizzle the hot water over the entire thing? Thanks!

Recipe: Chocolate Pudding Cake

I've had this recipe forever. The card is so splattered that I'll have to rewrite it if one more drop hits it.

Ingredients:

  • 1/2 cup biscuit/baking mix
  • 2 Tbsp. sugar
  • 2 tsp. baking cocoa
  • 3 Tbsp. milk
  • 1/2 tsp. vanilla extract

Topping:

  • 3 Tbsp. brown sugar
  • 1 Tbsp. baking cocoa
  • 1/2 cup boiling water
  • Ice cream or whipped cream, optional

Directions:

In a small bowl, combine baking mix, sugar and cocoa. Stir in milk and vanilla. Spoon into two greased 8 or 10 oz. custard cups.

For topping, combine the brown sugar and cocoa in a bowl. Stir in boiling water. Pour over batter. Bake at 350 degrees F for 25 minutes or until a toothpick inserted in the cake layer comes out clean. Top with a scoop of ice cream or whipped cream, if desired. Yield: 2 servings.
