Seashell Salad

This is a simple, basic recipe and you can add other things like tomatoes, cucumbers, meats, and/or cheeses to make it a complete hot-weather meal.

Ingredients:

  • 3 cups uncooked pasta shells
  • 1/3 cup vinegar
  • 1/4 cup olive or vegetable oil
  • 1 tsp. garlic salt
  • 1 tsp. sugar (or sugar substitute)
  • 1 tsp. Italian seasoning, or to taste
  • 1/4 tsp. black pepper
  • 1 medium sweet red or green pepper
  • 2 Tbsp. green onions, chopped

Directions:

Cook pasta according to package directions, drain, and rinse in cold water. Place in a large bowl and set aside.

In a jar with a tight-fitting lid combine vinegar, oil, and seasonings; shake well.

Add peppers, onions and dressing mixture to pasta; toss to coat well. Cover and chill until serving time.
