I've made both of the above recipes with great results. Another thing I do is, make a regular brownie recipe and sprinkle mint chocolate chips on top of the batter before baking. It's quick and easy, and tastes really good.

Try this: Follow the package recipe. When removed from oven, lay the flat thin re tangle mints over the top. (can't remember the name!) Let them melt a bit and spread.

Ingredients
First Layer:
1 lb. can chocolate syrup
1 stick margarine
1 cup sugar
4 eggs
1 cup flour
1/4 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
Second Layer:
3 cup powdered sugar
2 Tbsp. milk
1 stick margarine
1 tsp. peppermint flavoring
Third Layer:
1 cup chocolate chips
6 Tbsp. margarine
Mix margarine, sugar and eggs until smooth; add chocolate syrup, flour, baking powder, salt and vanilla. mix well and put in 9x13 inch greased jelly roll pan. Bake at 350 degrees for 20 minutes; let cool. Beat second layer ingredients well and spread on cooled brownies. For third layer, melt chocolate chips and margarine. Let cool, then spread on top of mint layer. Cool 10 minutes, then cut.
