Carrot Pie

Ingredients

  • 1 cup milk
  • 1/2 cup sugar
  • 2 eggs, separated
  • 2 tsp. vanilla
  • 1 cup raw carrot, grated
  • 1/8 tsp. salt
  • Ad
  • 2 Tbsp. sugar
  • Unbaked pie crust

Directions

Combine milk, 1/2 cup sugar, egg yolks, carrot, vanilla and salt - mix and beat well. Pour into pie crust and bake like custard in a moderate oven. Make meringue of egg whites beaten stiff with 2 Tbsp. of sugar. Top pie with meringue and brown slightly in oven.

Did you mean Tablespoons or Teaspoons of vanilla?

Editor's Note: I think it should be teaspoons because of the other measurements and changed the recipe to reflect that. Susan
