Ingredients
Crust:
- 1/3 cup sugar
- 1/3 cup butter or margarine
- 1/2 tsp. vanilla
- 1 cup flour
Filling:
- 4-5 large apples (Jonathan preferred)
- 1 pkg. cream cheese, softened (may be light), 8 oz. size
- 1/4 cup sugar
- 1 tsp. vanilla
- 1 egg
- 1/2 tsp. grated lemon peel, opt.
Topping:
- 1/3 cup sugar
- 1/2 tsp. cinnamon
- 1/4 cup sliced almonds
Directions
Cream together sugar, butter, and vanilla. Blend in flour. Pat into bottom and 1 1/2 inches up sides of greased 11x7 inch pan. Pare, core, and slice apples; turn apples into shallow pan. Cover with foil and put in 400 degree F oven for 15 minutes while preparing filling.
For Filling: Beat cheese with sugar; beat in egg, vanilla, and lemon peel, if used, until smooth. Turn into pan. Top with warm, partly cooked apple slices, and almonds. Combine 1/3 cup sugar and 1/2 teaspoon cinnamon; sprinkle over apples and almonds. Bake at 400 degrees F for 15 minutes, then turn down to 375 degrees F for 25 minutes more or until crust is browned and apples cooked.
