When a particular baking item, such as chocolate chips, is on sale I buy it, and make a large batch of cookies. We enjoy half right away, and I freeze the other half for when friends drop by or we just feel like a home baked treat!
I do this also! I put the balls of dough on a cookie sheet and then freeze them. After they are frozen, I put the balls of dough in a container in the freezer. When my husband and kids want cookies, they heat up the toaster oven and just cook what they want at that time.

Tip: When Making Cookies, Cook Half and Freeze Half
When you are baking cookies, try to bake only 1/2 a batch and freeze the rest for later. I flash freeze drop cookies and can bake as many or as few as I want at a time. This way you can have fresh cookies anytime you want them or when company shows up!

Flash freezing means to first spoon the dough onto the pan as if you were going to bake the cookies. Next place pan in the freezer and freeze until the dough is stiff and wouldn't stick together (usually 1-2 hours or so). Then remove the frozen balls of dough and place in a freezer bag or other container. This way you can take as many or as few unbaked cookies out at a time to bake. You can even bake from the frozen state by adding a few minutes to bake time. (04/15/2008)
