Oatmeal Cherry Apple Crisp

Ingredients:
  • 1 cup regular oats, uncooked
  • 1 cup all purpose flour
  • 1 cup firmly packed brown sugar
  • 1/2 cup butter or margarine, softened
  • 1 can sour red cherries, drained
  • 2 medium Granny Smith apples, peeled and chopped
  • 1 1/2 Tbsp. quick cooking tapioca
  • 1/2 cup apple juice

Directions:

Combine oats, flour, and brown sugar in a medium mixing bowl; mix well. Cut butter into oat mixture with a pastry blender until mixture resembles coarse meal. Spoon half of mixture into a lightly greased 8 inch square baking dish. Microwave at high 3 minutes. Let crust cool 15 minutes. Combine cherries, chopped apple, tapioca, and apple juice, mixing well; spoon over crust. Sprinkle remaining oat mixture over filling. Microwave at high 13-14 minutes, giving dish a half turn after 6 minutes. 8 servings

Delicious...I wasn't expecting it to taste so great. I added blueberries to the apples & cherries & used flour to thicken the fruit instead of tapioca & I put some walnuts in the crust part.
