Best Shortcake Ever
Ingredients
3 eggs, separated
1 1/2 cups sugar
1/2 cup cold water, divided
grated rind of lemon or 1/2 tsp. lemon extract
2 tsp. baking powder
2 cups cake flour
1/2 tsp. salt
Directions
Beat egg yolks with 1/4 cup water, add sugar, lemon and 1 cup flour. Beating well after each ingredient. Add rest of water. Beat. Sift last cup of flour with salt and baking powder and beat. Beat egg whites until stiff, then fold in gently.
Bake in 2 greased 9 inch pans (or 3 - 8 inch pans) at 350 degrees F for 20-25 minutes. Remove from pan after 5 minutes. Slice the layer in half. Spread with real whipping cream between layers. Layer slice berries on top. Garnish with berries and cream. Freezes well.

Does this really turn out to be "Shortcake"? Reading the ingredients it seems more like a cake(a good recipe too) but isn`t sortcake more "Short"?
