One-Egg Cake

Ingredients

  • 1/4 cup shortening
  • 2/3 cup sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup milk

Directions

Cream shortening and sugar. Add unbeaten egg and vanilla and beat thoroughly. Sift flour and measure 1 1/2 cups. Sift together with the baking powder and salt. Add these sifted dry ingredients alternately with the milk to the creamed shortening and sugar mixture. Pour into 8 inch square cake pan which has been greased and floured. Bake at 350 degrees F until the cake tests done, about 25 minutes. This is a nice little recipe for cupcakes, also.

Robin - want you to know after reading your recipe today I proceeded make "my" version revising the recipe a bit. I used 1/2 ww unbleached flour, 1/2 c wheat flour and 1/2 cup Old Fashioned oatmeal to make it a little more healthy and wholesome. I used 1/2 cup of Splenda brown sugar as sweetening and 5 semi sweet chocolate chips in each cupcake and it turned out just super. Thanks. I have a one-egg cake recipe but this is superior to the recipe I have. Thanks.
