Pumpkin Bars and Cream Cheese Frosting
It's a crowd pleaser. It's and delicious so easy to prepare.
Ingredients:
4 eggs
2 cups of sugar
1 cup vegetable oil
1 small can of pumpkin
2 cups of flour
1 tsp soda
1/2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
3/4 cup of nuts (optional)
cream cheese frosting
3 oz. cream cheese
3/4 stick of butter
3 cups of confectionary sugar
1 tsp vanilla
1 Tbsp. of milk
Directions:
Mix all together by hand or with a mixer. Pour into a greased and floured jelly roll pan. Bake at 350 degrees F for 25 minutes.
When cool, frost with cream cheese frosting. Canned frosting works great.
Servings: 42
Time: 20 minutes minutes preparation time
25 minutes minutes cooking time

Momodonna, I think that a small can of pumpkin is 15 oz. You could probably use a big can and only use half or make a double batch.

Recipe: Pumpkin Bars and Frosting
Ingredients
4 eggs
2 cups sugar
1 cup salad oil
1 can pumpkin (15 oz.)
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. cloves
1/2 tsp. nutmeg
Frosting:
1 package cream cheese (large)
3/4 stick butter
1 Tbsp. vanilla
4 cups powdered sugar
Directions
In a bowl, mix the eggs, sugar, oil and pumpkin together. Add the flour, baking powder, salt, cinnamon, ginger, cloves, and nutmeg together and mix well. Pour into a greased and floured 12x18 inch pan. Bake at 350 degrees F for 25-30 minutes. For frosting: Mix the cream cheese, butter and vanilla together and the powdered sugar last. Spread on cool bars.
