Harvest Apple Upside-Down Cake

Ingredients

Topping
  • 3 Tbsp. butter or margarine, melted
  • 1/3 cup chopped walnuts
  • 1/3 cup packed brown sugar
  • 1/4 tsp. ground cinnamon
  • 2 medium Granny Smith apples, peeled, cored and thinly sliced
Cake
  • 3 1/3 cups baking mix (like Bisquick)
  • 1/3 cup sugar
  • 3/4 tsp. ground cinnamon
  • 2 eggs
  • 1 cup milk
  • 1/3 cup vegetable oil

Directions

Preheat oven to 350 degrees F. For topping, pour butter into 9 inch square baking pan; tilt pan to evenly coat bottom of pan. In small bowl, combine walnuts, brown sugar and cinnamon; sprinkle evenly onto bottom of pan. Cut apple slices crosswise in half; arrange over nut mixture.

For cake, combine baking mix, sugar and cinnamon in a large bowl. In small bowl, mix eggs, milk and oil. Add to dry ingredients; stir until just moistened. Pour batter evenly over apples.

Bake 35-40 minutes or until wooden pick inserted in center comes out clean. Loosen edges of cake with knife; carefully invert onto large plate. Serve warm with whipped topping, if desired.
