I am looking for a recipe for pagach. My sister-in-law makes it but won't share her recipe. I would love to make it and give her some of mine. Anyone who knows how please tell me, I love the dish.

3/4 c sweetened milk
1 tsp salt
4 Tbs sugar
3 Tbs shortening
3 c flour
1 egg, beaten
1 cake yeast
1/4 c warm water

Pour milk over salt, sugar, and shortening. Dissolve yeast in water. Add egg and yeast to mixture. Add 1/2 of the flour to the mixture. Beat well. Add rest of flour. Place dough on board. Knead 5 minutes. Set dough in a bowl and let rise until double. Divide in half. Roll one half until about 2" thick.

Filling:
3 medium cooked potatoes
Can add to potatoesany or all of the following- cheese, butter, or fried cabbage

Spread filling about 3/4" thick. Roll out other half of dough to 2" and set on top of filling. Place this creation on greased cookie sheet and let rise 30 minutes. Bake in oven at 375 degrees for 20-30 minutes. When done, butter both sides and serve.

Try this one.

Pagach

1 loaf frozen bread dough, thawed
3 large potatoes, peeled and cooked
1 large onion, chopped and fried
1/4 lb(1 stick) butter or margerine
1 tbsp milk
5 oz cheddar cheese, grated

Cut bread dough in half. Roll out 1/2 on Pam sprayed cookie sheet.
Cook potatoes in 2 qts boiling salted water, and drain.
Fry onion in butter until golden.
Add onion to potatoes.
Add milk, cheese, and salt and pepper to taste.
Mash with potatoes.
Spread over rolled bread dough ti 1/2" from edge.
Roll out other !/2, and cover, pinching edges.
Bake at 350 degrees for 20 -30 mins until golden brown.
Enjoy.
