Does anyone have any ideas or recipes for using up less than fresh chocolate cupcakes? I don't want to just throw them out. They don't have frosting on them. They got dried out from being in the freezer too long.

I got this recipe out of newspaper, sounds delicious!

2 1/2 cups of crumbled day old muffins or cupcakes( any flavour)
1/2 cup sherry
1/2 cup chopped apricots, and toasted nuts (optional)
3/4 cup cream
200g dark chocolate, roughly chopped.

Put crumbled cake into a bowl, pour over sherry and leave overnight or at least 4 hours.
Then add apricots and nuts. Press into a spring form tin. Pour cream over the chocolate and microwave until melted, stir until smooth. Pour over cake mix, and refrigerate for at least 6 hours before slicing. Cut with a hot knife. Bon Apetite!

You could crumble it up and add melted butter and use it for a base for pies or desserts that need a no-bake crust. But that chocolate bread pudding sounds really good too!

I would go for a chocolate bread pudding. You can throw in any breads you want and maybe some chocolate chips. Then add eggs & milk. Bake & you will have a yummy dessert.

You could make a trifle dessert. It is a layered cake, yogurt and fruit dessert.

In a bowl, layer the crumbled cup cakes, then fruit , then yogurt, then repeat layers. Refrigerate covered for at least 4-6 hrs or overnight. Make it in a clear glass bowl if possible, because it looks so good that way.
Amounts needed will depend on how much cake you have, but a dozen cupcakes would need 2 8 oz yogurts, and 2 16 oz cans of fruit drained. You could also use fresh fruit, and would need about 4 cups or so.
With chocolate cake, I would use cherry yogurt and cherries for a Black Forest style trifle. Fruit cocktail and any fruit flavored yogurt would be good too. You can use Coolwhip instead of yogurt, but I use yogurt so I can tell myself dessert is somewhat healthy, what with fruit and yogurt.
