Grilled Corn with Parmesan Butter

Takes awhile for prep and grilling but it's so worth the yummy flavor.

Ingredients:

  • 2 ears corn, in husks
  • 2 Tbsp. butter, softened
  • 1 tsp. parsley
  • 2 Tbsp. grated Parmesan cheese

Directions:

Soak corn in husks in cold water for 20 minutes, then shake off excess water.

Meanwhile, preheat grill to medium heat and beat together the butter, cheese and parsley in a small bowl until creamy.

Carefully peel back husks from corn to within 1 inch of the bottom, remove silk and evenly spread butter mixture over the corn. Rewrap corn in husks securing top portion with string if needed.

Grill corn, covered, over medium heat for 20 to 25 minutes or until tender, turning often.
