Sweet Potato Puffs
- 2 cup mashed sweet potatoes
- 1 egg, beaten
- 1 tsp. salt
- 1 tsp. pepper
- 3/4 cup crushed cornflakes
- 8 marshmallows, large size
If potatoes are unseasoned, add salt and pepper. Add beaten egg. Form in balls with marshmallows placed inside of each ball. Roll in crushed cornflakes. Deep fry until golden brown. Drain on absorbent paper towels. Serve hot.
