Sweet PotatoesToo good to save for Thanksgiving and Christmas.

Ingredients:

  • 4 medium sweet potatoes, peeled and cubed
  • 1/3 cup brown sugar
  • 3 eggs, beaten
  • Advertisement

  • 1/3 cup butter
  • 1/2 cup milk
  • 1 tsp. salt
  • 1 tsp. vanilla

Topping:

  • 3/4 cup crushed cornflakes
  • 1/3 cup chopped pecans
  • 1/3 cup brown sugar
  • 1/3 cup melted butter

Directions:

Boil the potatoes until done, then mash. Add the rest of the ingredients and beat until smooth. Pour into a buttered baking dish and bake at 350 degrees F for 20 minutes. Mix together the topping ingredients and sprinkle over the casserole. Bake for 10 - 15 minutes until the topping is lightly browned and crunchy.

If potatoes are unseasoned, add salt and pepper. Add beaten egg. Form in balls with marshmallows placed inside of each ball.
