Lemonade Chicken

I like this because you can cook it in your crockpot and not worry about it till you are ready to make the gravy. The lemonade tenderizes the chicken and gives it a delicious flavor.

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1 small can of frozen lemonade, thawed
  • 2 Tbsp. brown sugar
  • 2 Tbsp. ketchup
  • 1 Tbsp. vinegar
  • 1 Tbsp. cornstarch
  • 1 Tbsp. cold water
  • hot cooked rice

Directions:

Arrange chicken pieces in crock pot. Combine lemonade, brown sugar, vinegar and ketchup. Pour over chicken. Cover, cook on low for 6 to 8 hours or high 3 to 4 hours. When done, remove chicken from the crock pot. Pour the liquid into a saucepan, skimming the fat; bring to a boil. In a small bowl, combine the cornstarch mixture. Stir until thickened. Pour sauce over chicken and serve with hot rice.

6-8 or 3-4 Hours Cooking Time
