Depending on your location and the microclimate, azaleas or rhododendrons are lovely under pine and other conifers. They're also lovely under oaks. Plant them in masses, it's really beautiful during the blooming season. They'll need to be pruned as soon as the blooms fade to avoid pruning off the next years blooms though, as the plants set for next year blooms immediately after the current ones fade.

Your local nursery is the best place to select the right plants for your area, and the library will have great books on raising these gorgeous garden stars.

Blueberries are also acid-loving, and give you fruit besides. I don't know how much sun they need, though, nor how shady it is around your trees.

Hostas and hydrangeas do well in that type setting.

I just saw the post on feeding your roses coffee grounds. It mentioned that the roses are an acid loving plant. What other plants are consider "acid loving"?
