Mashed Potatoes with Goat Cheese

You can turn plain mashed potatoes into a special, tasty dish with the addition of goat cheese and spices. This is a guide about making mashed potatoes with goat cheese.

  • 3 large potatoes
  • 1 small log of goat cheese
  • 1 cup chicken broth
  • 2 Tbsp thyme
  • 10 blades chives
  • 1 shallot
  • 2 Tbsp butter
  • 1 Tbsp extra-virgin olive oil
  • salt and pepper to taste


Bring medium pot to boil, boil potatoes for 15 minutes or until tender.

Drain potatoes and adjust heat to medium.

Add olive oil then butter, when butter has melted add shallots and sauté for 2-3 minutes

Add chives, thyme and potatoes to the pan with the butter and olive oil and mash adding broth until you have reach your desired consistency.

Add salt and pepper to taste

Cut goat cheese into 4 slices.

Serve on dinner plate with a slice of goat cheese on top.
