Mock'Crab Cakes with Zucchini

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 8 cakes

Ingredients:

• 2 cups shredded zucchini, drained of liquid
• 1 cup seasoned bread crumbs
• 2 Tbsp grated onion (I put mine in the food chopper and minced very finely)
• 2 Tbsp mayonnaise
• 2 eggs
• 2 tsp Old Bay Seasoning
• 1/2 tsp salt
• 1 Tbsp chopped parsley

Steps:

1. Mix all ingredients. Shape into 8 patties. Use wet hands for easier shaping.

 
2. Fry in Crisco, browning both sides. Instead of frying, I baked mine at 350 degrees F in my toaster oven for about 10 minutes per side.

And what did you use to make your own Old Bay Seasoning? I'd like to try to make this.
Looks really good... And vegetarian, of the oco-lacto variety. Thanks.
