How do I freeze mint?

When I freeze my fresh mint, I use ice trays. I put a few leaves of the mint into each ice tray compartment and then add water. These "mint ice cubes" can be used in drinks calling for mint such as ice tea or lemonade. Or you can also thaw the cubes and then drain the mint in a colander and use for other recipes. I hope this helps. Enjoy your time in the kitchen! Sharon Stone Gibson, Costa Rica
