Recipe For Cabbage Bread Rolls

We had a neighbor that did a lot of baking. She used to make 'cabbage rolls', but they were an actual bread dinner-type roll. Definitely not the cabbage rolls w/ cabbage leafs rolled w/ beef inside. This was an actual roll w/ possibly cabbage cut up in it. Anyone have any feedback?

Recipe For Cabbage Bread Rolls

This is the recipe my mom used to make when we were kids. She usually left out the hamburger and just used cabbage and onions. We loved it!

Bierox (Russian-German) aka German Hamburger

Ingredients:

  • 2 boxes of Pillsbury Hot Roll mix or your favorite hot roll mix (or make your own bread dough)
  • 1 1/2 lbs ground beef
  • 1 large head of cabbage, shredded
  • 1 large onion, diced
  • flour
  • butter, melted

Directions:

Lightly brown ground beef; add cabbage and onion; season generously with black pepper and salt. Cook until onions are clear and cabbage is tender. Drain.

Prepare hot roll mix (your choice) as instructed. On lightly floured surface, roll hot roll mix. With a knife, cut into 3" x 3" squares. (We always make ours bigger so that they end up about 4 x 4 or 2 across on a 9 x 13 pan) With an ice cream scoop (or something similar), add ground beef mixture to center of square. Fold each corner to the middle and pinch the dough together. Flip upside down and put on lightly greased cookie sheet or baking stone. (We always used Pyrex baking dishes. Let rise before baking.

Bake at 375 F until golden brown - about 15 minutes. Brush lightly with melted butter.

Cabbage Bread Rolls

You didn't say if what you were looking for had any meats in it, but I thought not. I was able to find 3 different recipes for you. I hope one of them is what you are looking for. These seem to be whole or all together, but I'm sure you could use separate ones or maybe use a muffin tin or just fold the sides over and pinch together before baking.

Cabbage Bread #1 ( Slovakian)

  • 1/4 c. butter
  • 4 c. chopped cabbage
  • 2 c. sliced onion
  • 1/2 tsp. salt
  • 1/8 to 1/4 tsp. pepper
  • 2, 10 ounce packages refrigerated flaky biscuits

Heat oven to 375 degrees F. In large skillet, melt butter. Add cabbage, onion, salt, and pepper. Cover and cook over medium heat 10-15 minutes until tender crisp, stirring occasionally.

Separate dough into 20 biscuits. Place in ungreased 12 inch pizza pan.
Press over bottom and 1/2 inch up sides to form crust. Spoon cabbage over crust.
Bake at 375 degrees for 18-25 minutes or until golden.

This unusual recipe tops refrigerated biscuits with chopped cabbage cooked together with onions and caraway seeds.

Cabbage Bread #2 (Slovakian)

  • 2 Tbsp. olive oil
  • 2 Tbsp. butter
  • 4 cups bagged coleslaw mix
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. caraway seed
  • 2, 10 ounce packages refrigerated biscuits

In heavy skillet saute cabbage, onion, and garlic in butter and oil for 2-3 minutes. Cover skillet and cook over medium heat for 10-12 minutes until cabbage and onions are crisp tender. Stir occasionally during cooking. Sprinkle with salt, pepper, and caraway seed. Heat oven to 375 degrees F.

Meanwhile, separate dough into 20 biscuits and press over bottom and 1/2 inch up sides of 13x9x2 inch pan or 12 inch pizza pan. Make sure perforations are well sealed. Spoon hot cabbage mixture into crust. Bake at 375 degrees F for 18-25 minutes or until crust
is deep golden brown. Cut to serve. Makes 8-10 servings.

Serve this nutritious quick bread with soup or salad. Day-old cabbage bread is good toasted.
Also makes great sandwiches.

Cabbage Bread #3, high calcium

  • 1/2 cup finely shredded red cabbage
  • 1/2 cup finely shredded green cabbage
  • 1 tsp lemon juice
  • 1/2 cup plain non-fat or low-fat yogurt
  • 1/4 cup orange juice concentrate, or 1/4 cup orange juice plus 1 Tbsp sugar
  • 1/4 cup canola oil
  • 1/4 cup powdered nonfat milk
  • 1 egg
  • 1 cup whole-wheat flour
  • 3/4 cup all-purpose flour
  • 1/4 cup toasted sesame seeds
  • 2 tsp baking powder
  • 1/2 tsp salt (optional)
  • 1/8 tsp mace

  • 1/8 tsp ground ginger

Heat oven to 350 degrees F. Place the cabbage in a small bowl and toss it with lemon juice.
In large measuring cup or medium bowl, combine the yogurt, orange juice concentrate, oil, powdered milk and egg, blending the ingredients well. Stir in the cabbage.

In large bowl, combine the flours, sesame seeds, baking powder, baking soda, salt, mace, and ginger, mixing them well. Gradually add the cabbage mixture to the flour mixture and mix
the ingredients until they are just combined. Pour the batter into a greased 8 x 4-inch loaf pan.
Place the pan in hot oven and bake for 35 to 45 minutes or until a tester inserted into the center of the bread comes out clean. Turn the bread out onto a rack to cool completely before slicing.

Notes:
After the first day, it is wonderful toasted. This can be made with 1 cup of only one type of cabbage, but for the sake of color, choose red cabbage.

An old Polish lady I once knew made these yeast made buns with cabbage, onion, and bacon in centre, and called them piroshki, when you Google piroshki you will find this and many other combinations. (06/25/2009)

My recipe has hamburger, cabbage, onion, bacon, vinegar to taste and a little Lawry's seasoning salt, garlic powder and your favorite bread dough. Soooo good! Dip in homemade hot yellow mustard.
