Spinach Bake on trayTop this spinach mixture with whatever toppings you like. Very tasty and low carb.

Prep Time: 10 minutes

Cook Time: 16 minutes

Total Time: 26 minutes

Yield: Will serve 2

Ingredients:

  • 1 bag (8 oz) spinach
  • 1/2 cup shredded mozzarella cheese
  • 1 egg
  • 3/4 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • pasta sauce
  • Parmesan cheese
  • Any other toppings you like

Steps:

  1. Put the spinach, mozzarella cheese, egg and spices in the bowl of a food processor.

  5. Spread as thinly as possible on a baking sheet.

  7. Bake at 400 degrees F for 8 minutes.
  8. Take out of the oven. Spread thinly with tomato sauce. Top with Parmesan cheese. Add any toppings you like. I used leftover meatballs.

  10. Return to oven and bake another 8 minutes, or until bubbly. Let rest a few minutes before serving.

Preheat oven to 350 degrees F. In a large pan, melt the butter over low heat. Remove 2 Tbsp. of the melted butter to a large bowl and add 1/4 cup cereal.
