This Indian inspired chicken is marinated in a mix of wonderful spices and yogurt. Most of the work is in the marinade. Then just cook, and enjoy. I like this with roast eggplant and a side of rice. This recipe uses Garam Masala seasoning. You can use store-bought, or use the link below to my recipe for a homemade batch.

Prep Time: 15 minutes plus marinating time

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

  • 2 lb boneless skinless chicken pieces
  • 2 cups greek yogurt
  • 1 tsp Kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground ginger
  • 1 tsp paprika
  • 1 tsp turmeric
  • 1 tsp cayenne pepper
  • 1 Tbsp garam masala

Steps:

  1. Measure out all the salt and spices in a medium bowl.

  3. Mix very well.
  4. Place all the spices, the yogurt, and the chicken in a big freezer bag and toss around to coat well. Place in fridge to marinate for at least 8 hours.
  5. Preheat oven to 400 F. Lay chicken pieces on a greased sheet pan and bake for about 30 minutes.
