This vegetarian sauce is a great alternative to red sauce to serve with spaghetti.
Place oil, garlic, basil and pepper in the blender. Blend until the garlic is liquefied. Add Parmesan cheese and 1/4 cup warm water and blend until smooth. Then add the last 1/4 cup warm water and walnuts, blend until smooth. Pour over hot cooked spaghetti and toss to blend. Serve with a green salad. Serves 4.
Note: Experts are recommending one ounce of nuts per day in our diet, and this is a wonderful way to get some!
Bring large pot of water to a boil, once boiling add pasta, cook until soft.
Once pasta is done drain water.
Heat olive oil on Medium heat. Add Garlic before pan heats up.
Once pan is heated up add onion, cook for 2-3 minutes.
Add Zucchini, squash and green peppers.
Sprinkle on Italian seasoning and black pepper.
Cook until vegetables are tender.
Add olive oil sauce to the pasta, and serve.
Cook pasta according to package directions, adding peas for the last few minutes; drain. Place in a large bowl and mix with remaining vegetables and spices. Pour dressing on top, starting with 1/2 cup and adding more if necessary
