Easter Dinner Leftovers

Leftovers are one of my favorite subjects, because it can be a creative experience to come up with new meals from those leftovers. Here are a few ideas for Easter dinner leftovers, using some of the most common foods served in the US at Easter time.


Leftover Easter dinner ham? Slice it, chop it, and freeze it in ziploc bags to toss into future omelettes, add to soups, or to fry as hash with some potatoes.

Make ham soup with the ham bone and leftover ham meat. There are lots of recipes online for ham soups; my favorite recipe source for ease of navigation is allrecipes.com.

Leftover asparagus? Make asparagus omelettes. Chop the already cooked asparagus and add to beaten eggs, add a little grated cheddar or American cheese, and make your omelette for any meal. Also this is great cold on a sandwich. Or place the asparagus in a buttered baking dish, then sprinkle with braedcrumbs mixed with parmesan cheese, and bake until heated through.

Leftover turkey, gravy, mashed potatoes? Make a layered leftovers casserole. Clean off the turkey meat, then layer it on the bottom of a greased baking pan, pour leftover turkey gravy over it, layer leftover stuffing on top (or make some more from a box mix if you ran out), layer any leftover veggie over that (or use a can or bag of whatever you have), layer leftover mashed potatoes next, press everything down firmly, and bake at 350 degrees F. for about 35-40 minutes or until heated through. Cut into squares and serve hot.


Or make turkey soup! Yum! Many recipes can be found online.

Just a few ideas, but don't let your leftovers go to waste. There are lots of good meals left in them, with just a little imagination (use the internet to search out recipes to help you).
