I had worked in many restaurants through the years and know the importance of keeping food either hot or cold. While preparing a meal, I chill my leftover bowls and tops in the freezer and when I have finished eating fill them with the hot food. This sometimes takes more than one bowl as I stir the food as soon as I fill the bowl and then transfer that amount into another one if it is too hot to put into the refrigerator. While this is sometimes a little more work, it makes for safer food handling and it makes me feel better knowing my food is safe to eat.
