Heat sugar, water and cinnamon candies in a saucepan over low heat until candy is dissolved. Pare and core apples. Place in syrup. Cover and cook very slowly until tender but not broken. The apples should be bright red. Turn during cooking so that they do not become mushy and they will take on an even color. Remove from syrup and chill. Combine cottage cheese and chopped nuts. Fill centers of apples with this mixture. Arrange them on crisp salad greens and garnish with a spoonful of mayonnaise and whole walnuts. Serves 6.
