Grilled Buffalo Chicken Burgers

Found this idea at Allrecipes but, if you know me, I just have to switch and change things around a bit to suit my taste. Don't forget to serve with a side of blue cheese dressing and celery sticks and the hot sauce bottle for "extra heat" lovers.

  • 3/4 lb. ground dark meat chicken
  • 2 Tbsp. plus 1 tsp. hot pepper sauce, (such as Durkee's or Frank's)
  • 1 1/2 tsp. hot pepper sauce
  • 2 Kaiser rolls, split and lightly toasted/grilled if desired
  • 2 hearts of romaine lettuce leaves
  • 1/3 cup celery, diced
  • 1/3 cup Blue Cheese dressing (I recommend Marie' Chunk Blue Cheese found in the produce section)

Lightly oil grill grate and preheat grill to medium high.

Mix the ground chicken and 2 tablespoons plus 1 teaspoon of the hot sauce in a bowl until evenly blended. Form into two patties of appropriate size to fit on the Kaiser rolls (they will be about 3/4 inch thick).

Grill burgers 6 to 7 minutes, flip the burgers over, brush the cooked side with remaining hot sauce and continue cooking until no juices run clear when pricked in the center; about 5 minutes.

Place a lettuce leaf on each roll bottom, top each with a burger patty, evenly spoon blue cheese sauce and celery on burger patties, place the top of the roll on top of all and serve.
