Pan Fried Greek Potatoes

Ingredients:

  • 4 slices uncooked bacon, chopped
  • 2 medium potatoes, very thinly sliced
  • 1/4 cup green onions, sliced
  • 1 (4 oz.) pkg. crumbled Basil and Tomato Feta Cheese

Directions:

Cook and stir bacon in large skillet on medium high heat until bacon is crisp. Remove bacon with slotted spoon to paper towel reserving drippings in skillet.

Add potatoes to skillet. Reduce heat to medium low and cook 15 minutes or until potatoes are tender, stirring occasionally. Add onions; cook and stir 2 minutes. Remove from heat. Stir in cheese until well blended and serve.
